The Hida-gyu featured on the Teppan Kaiseki by Chef Katsuji Kato 

Hida-gyu or Hida beef is a black-haired Japanese cattle breed raised in the Gifu prefecture. It is also known for its unique quality of having a beautiful and intense marbling pattern. 

  • Featured in the Teppan Kaiseki by Chef Katsuji Kato priced at Php 7,500++.
  • Available for lunch and dinner.
  • The Hida-gyu will be available from March 1 to May 31, 2024 only.

 

The Aori Ika featured on the Special Kaiseki by Chef Katsuji Kato.

Aori Ika, the Bigfin Reef Squid, is a gourmet delight known for its tender texture and sweet flavor. Served together with Japanese green asparagus which is highly prized in culinary circles for its tenderness and slight sweet taste compared to other varieties of asparagus.

  • Featured in the Special Kaiseki by Chef Katsuji Kato priced at Php 7,500++.
  • Available for dinner service only.
  • The Aori Ika will be available from May 1 to June 30, 2024 only.

 

Yamazato's featured fish: Katsuo (Skipjack Tuna)

Katsuo, also known as Skipjack Tuna, is a popular fish in Japanese cuisine due to its rich flavor which is often enjoyed in various preparations such as sashimi, sushi, and grilled dishes. Katsuo is particularly famous for its role in making bonito flakes (katsuobushi), a key ingredient in dashi broth, the foundation of many Japanese dishes.

  • Featured in the Yamazato Kaiseki priced at Php 7,500++.
  • The Katsuo will be available from May 1 to April 31, 2024 during dinner service only.
