What makes the Dalmore Emerald unique is this comes from a cask specially hand-picked from among the collection of rare casks by Mr. Gregg Glass, The Dalmore Master Whisky Maker and Master Distiller of the Year at the
Icons of Whisky Scotland Awards 2023 in honor of Okura’s momentous milestone.
The Dalmore Emerald whisky is initially matured in specially selected American white oak ex-bourbon casks and then finished in a variety of aged Sherry casks, including Apostoles, Amoroso, and Matusalem Oloroso. This meticulous process results in a whisky with unparalleled depth and complexity. The aroma of Seville orange and subtle winter spice, combined with a palate of sweet orange, creamy caramel, and fresh ginger, culminates in finishing notes of dark chocolate orange and gentle wood spice. This intricate layering of flavors mirrors the sophisticated blend of traditional Japanese beauty and Western functionality that defines The Okura Tokyo.

This masterpiece will be exclusively available at Hotel Okura Manila starting December 2024 for PHP 63,000 ++ per bottle. It has an ABV of 40%, specially crafted by our Master Distiller, Mr. Gregg Glass to commemorate Hotel Okura’s milestone.

Mr. Gregg Glass
Master Whisky Maker and Blender, The Dalmore
Gregg Glass has been awarded The Master Distiller of the Year at the 2023 Icons of Whisky awards. He has more than ten years’ experience as a whisky maker and blender, and joined Whyte & Mackay in 2016. A hands-on whisky maker & blender, he is already known for innovation and quality, helping Compass Box grow from its early days to becoming the award-winning brand it is today.
Gregg Glass started his whisky career at the age of 18, and has spent much of his life working in the industry. Originally from the Black Isle, which is abundant in barley, Gregg has always harbored a keen passion for whisky, alongside cooking and great quality drinks; and has spent years studying brewing, distilling, and flavor combinations.
After getting his start as a tour guide at distilleries in the Highlands, Gregg has worked his way up through many areas and roles within the industry before specializing in whisky making.
Gregg credits Whyte & Mackay’s own Richard Paterson with sparking his interest in whisky and cementing his ambition to become a whisky maker after first seeing him in action sampling in the cask warehouse during a two-week stint at The Dalmore’s Visitor Centre.
He relishes getting his hands dirty; sourcing and creating casks, working at cooperages, distilleries and cask warehouses, cask sampling and conducting extensive trials and recipe iterations in a bid for perfection.
Along with a healthy respect for tradition and the historical, social, and cultural aspects of the Scotch whisky industry, Gregg believes in the importance of an inquisitive, experimental and innovative outlook, with quality at the forefront. He looks forward to bringing great and interesting whiskies expressions to as many people as possible.
